And love is precisely what our cooks put into the dishes they prepare; it’s that little extra that makes your mouth water at the very thought of a dish of Tagliatelle al Ragù or Crescentine con i Salumi. Bologna, along with the whole of Emilia Romagna, is one of the cradles of traditional Italian cuisine!
Typical dishes? Tortellini!
Tagliatelle al ragù and Lasagne are some of Bologna’s most famous dishes, but the most important is Tortellini: made from egg pasta with a delicious meat filling. Legend has it that they were invented in an inn in Castelfranco Emilia, between Modena and Bologna, and were modelled on the shape of the navel of Venus. Try them served in a beef and capon broth!
